LPPM and Center for Halal Science of IPB University Hold Training on Handling and Slaughtering of Sacrifice in FMD Outbreak Situations

The Institute for Research and Community Service (LPPM) in collaboration with the Center for Halal Science (HSC) of IPB University held a Training on the Handling and Slaughter of Halal Sacrificial Animals in the Midst of the FMD Outbreak for DKM Management" in a hybrid manner at the Vocational School Building of IPB University, (28/6). This activity was attended by residents of IPB University, administrators of the Mosque Prosperity Council (DKM) and the general public to add insight related to sacrifice, especially in the situation of the Mouth and Nail Disease (FMD) outbreak.

Drh Supratikno, Lecturer of the School of Veterinary Medicine and Biomedical Science (SKHB) IPB University was present as a resource person. According to him, people do not need to worry about consuming meat that is infected with FMD because it is not a zoonosis. This is different from the Anthrax virus.

"The thing to worry about is the further spread of the virus by humans," he said.

According to him, the slaughtering process in accordance with the Shari'a and the guidelines of the Indonesian Ulema Council (MUI) can be one of the ways to control and eradicate this virus. He said during the FMD period, being compassionate towards healthy and infected animals was an obligation. “If the animal stress management is carried out properly, it will encourage the formation of lactic acid, thereby lowering the animal's body pH below six. At a low pH, the FMD virus will be inactivated," he said.

He added that both the butcher and the community who assist in the slaughtering process must be able to pay attention to and prepare the best environment and facilities for animals. The three main keys in slaughtering are the environment and design of the slaughterhouse, competence of personnel and appropriate equipment.

To prevent further spread of the FMD virus, this researcher at HSC IPB University said that from the point of sale of animals to the location of slaughter and slaughter of animals must meet the requirements. “The location has also received approval from the authorities that carry out the functions of animal husbandry and animal health. Especially waste disposal facilities and isolation places for animals infected with FMD must be available," he added.

Meanwhile, Lesa Aditia MSc, IPB University Lecturer from the Faculty of Animal Science explained about the selection of sacrificial animals and the estimation of carcass calculations (meat of sacrificial animals).

According to the HSC IPB University researcher, there are various types of Indonesian cattle. The size of the skeleton can determine how big the carcass will be. The type of goat and sheep selected also determines the size of the carcass.

He shared tips on selecting and assessing beef with high meat yields. First, the sacrificial animal needs to be observed carefully for muscle, fat, volume and body structure values. Prospective buyers must be able to distinguish their ideal values. Not too muscular, not too fat, ideal body volume, and good body structure.

"Less, this value will determine the total amount of meat that we will get," he said.

According to him, weight is not only one of the determining factors for the total carcass size. The percentage of meat yield depends on the size of the skeleton, livestock condition, sex, trimming of carcass fat and so on. “The carcass that can be obtained is only 50 percent of the live weight. This value is further divided for the amount of meat, fat and bones so that the final percentage of meat obtained is only 30-35 percent," he said.

This activity also presented KH Miftahul Huda, Secretary of the MUI Fatwa Commission. He shared material related to the shari'a of sacrificial worship. (MW/Zul)
