IPB University Experts Explain the Facts of Lobster Blood Content


Lobster is a prima donna food for seafood culinary lovers. Its high protein content is directly proportional to its fantastic price. Behind the preciousness of lobsters as food, lobsters are not like marine animals in general which have red blood, but lobster blood is generally colorless. This was explained by Prof Sulistiono, Professor of the Faculty of Fisheries and Marine Science, IPB University.

"Lobster blood is generally colorless, it's just that when lobster blood is oxygenated, it turns bluish," he said.

Prof Sulistiono explained that lobster blood contains hemocyanin which contains copper. This is different from the blood of vertebrates such as frogs, reptiles, birds, and mammals whose red blood color is due to the iron-rich hemoglobin content.

"Clear lobster blood indicates that the blood is not bound to oxygen in the hemocyanin. Hemocyanin is an oxygen-carrying protein in the blood of Crustaceae animals," added Prof Sulistiono, a lecturer at IPB University from the Department of Aquatic Resources Management.

Prof Sulistiono continued, the benefits of clear lobster blood are the same as other animals, such as transporting oxygen and nutrients. However, lobster hemocyanin is not only in the blood but is also suspended directly in the hemolymph organ.

"Nutritionally, the clear blood of lobsters has no effect on the nutritional content. Each animal has a different nutritional content. When a lobster is in a deeper sea with low oxygen, its blood is clearer than a lobster near the surface which is richer in oxygen," he closed. (SMH/RA) (IAAS/JUD)
