IPB Student Creation Results of Biscuit Formulation from Pumpkin Seeds and Black Oncom for Toddlers

Bogor Agricultural University student (IPB) from the Department of Community Nutrition, Faculty of Human Ecology (FEMA), Diska Anjelina Sudarta, Rianita Fatih Ariba, and I Putu Balda Yogi Pratama formulate biscuits for infants affected by disaster. With the assistance of Dr. Agr. Eny Palupi, S.TP, M.Sc, they make alternative food based on pumpkin seeds and black oncom for toddlers.
According to Diska, Indonesia is a country prone to natural disasters, such as earthquakes, tsunamis, volcanoes, floods, droughts or landslides. Meanwhile, children under five in natural disasters are vulnerable to health and malnutrition, requiring attention and becoming priority in the fulfillment of nutritional intake.
Though the age, toddler is golden age period in which the brain is growing rapidly and cannot be repaired in the next period. Thus, the toddlers are need enough nutrition for brain development.
One alternative that can be a solution in this emergency is with alternative food-based pumpkin seeds rich in omega-3 is beneficial for brain development, as well as with the addition of black oncom that is rich in protein.
"With this alternative food, toddlers who become victims of natural disasters can still awake their nutritional intake," he said.
This study aims to develop the use of pumpkin seeds and black oncom as an emergency food in the form of biscuits that can meet the energy and nutrient needs of children under five in emergencies. This biscuit is a ready-to-eat food that is practical for toddlers during natural disaster. The ingredients of the manufacture are also affordable local foodstuffs and can be easily found, such as pumpkin seeds, black oncom, rice flour, cow milk and young papaya sap.
Based on organoleptic test, the selected formula with 5% pumpkin seed and 5% oncom. In 100 grams of this biscuit contains energy 456 kcal, 12 g protein, 12 g fat, 70 g carbohydrates, omega-3 by 0.7 g, and omega-6 of 2.3 g.
"We hope that the pumpkin-based biscuits and black oncom can be a solution and suggestion that answers the problems that exist in times of natural disasters, especially for vulnerable groups such as toddlers," said Diska. (DMR).
