A Group of IPB Researchers Analysed The Use Ice Gel to Maintain the Quality of Oyster Mushroom in the Transportation

Pleurotus ostreatus, the oyster mushroom, is a common edible mushroom. Oyster mushrooms may sound more like something you'd find in the ocean than on land. Yet this edible fungus can be beneficial to the body and breaks down toxic chemicals. Oysters are one of the most versatile mushrooms. They are easy to cultivate and common all over the world. They are also very beautiful, coming in a broad spectrum of colours, the oyster mushrooms high nutrition content made it very popular. Mushrooms are a rich source of good quality protein, having most of the essential amino acids, minerals and vitamins with low calories. After harvesting, packing of oyster mushrooms is generally done during the day. Higher environmental temperatures when oyster mushroom distribution will accelerate quality degradation.

A researcher of the Department of Mechanical and Biosystem Engineering, Faculty of Agricultural Technology, of Bogor Agricultural Institute (FATETA IPB), Emmy Darmawati explained that to overcome the problem by lowering the temperature of the fungus. Because moisture and temperature influence the growth of fungi, characterizing weather conditions favorable for fungi may be used to maintain the freshness of the mushroom during transport. The temperature used to store vegetables and fruits ranges from 15 degrees Celsius.

"Ice gel can be used to lower the mushrooms temperature during transport, so that the mushrooms quality can be maintained. This study was aimed to design the packages, determine the ice gel need, and decreasing the oyster mushroom temperature into 150 C.  by applying ice gel. Ice gel is re-useable, they can re-frozen being use as the cold media pfor transporting agricultural commodity," said Emy.

She and her colleagues, namely Mila Siti Amalia and Leopold Oscar Nelwan, have carried their research work on designing product packaging and ice gel applications for oyster mushroom transportation. "We made corrugated box design for corrugated fiberboard boxes with the functional physical, processing and end-use requirements, especially for containing about 3 kg of substrate. Packaging is developed for 3 kg per package oyster mushroom transportation, with mushrom temperature is 15OC and distribution time is 2.5 hour by using corrugated box. Ice gels were  arranged in such a way, two pieces were placed horizontally at the top of the packaging and two pieces were put  vertically on the packaging side," she said.

The researchers revealed that cardboard box with which has 50 centimeters in length x 40 centimeters in width x 24 centimeters in thickness which contained 3 ice gel three kilograms of mushrooms and 2.52 kilograms of ice gel, is expected to reduce the temperature of mushrooms at 150C for 2.5 hours.

"The position of one or two arrangement ice gel has not been able to achieve the desired fungal temperature up to 150 Celsius. But the position of two ice gel arrangement can maintain temperature of mushrooms at 110 - 12.20 Celsius. Overall the average mushroom temperature in the packaging dropped from 280C of room temperature to 16.90 C  and 17.10 C  for 2.5 hours for each position of ice gel," she said. (Wied)
