The Evaluation of the Slaughtering Process of the Halal Slaughterhouse by IPB Team

Meat is animal flesh that is eaten as food. The term meat industry describes modern industrialized livestock agriculture for production, packing, preservation and marketing of meat (in contrast to dairy products, wool, etc.). In economics, it is a fusion of primary (agriculture) and secondary (industry) activity and hard to characterize strictly in terms of either one alone. Meat is a livestock industry product resulting from animal slaughter. The people of Indonesia with the majority of the population are Muslims, not only emphasize the nutrition factor of meat but also the aspect of halal so that the existence of Animal Cutting House (RPH) is needed to guarantee the quality of meat safely, Healthy, Whole and Halal (ASUH). The Islamic form of slaughtering animals or poultry, involves killing through a cut to the jugular vein, carotid artery and windpipe.
This led a group of researchers from the Bogor Agricultural University (IPB) to carry out research on the evaluation of halal slaughter and good slaughtering practices (GSP) in category II RPH. The group are Zikri Maulina Gaznur, Henny Nuraini and Rudy Priyanto of the Department of Animal Production and Technology Science (IPTP), of the Faculty of Animal Husbandry of Bogor Agricultural University (FAPET IPB).
Henny said the slaughter of animals in the RPH must follow regulations concerning animal welfare in Indonesia. Based on the Decree of the Minister of Agriculture No. 13 / OT.140 / 1/2010 on RPH Ruminansia Requirement and Meat Cutting Plant, the slaughter of animals must be carried out correctly and accurately, they must be healthy ruminants and must be slaughtered in the correct way and halal, (in accordance with veterinary public health requirements, animal welfare and Islamic sharia). "The stage of slaughter is a critical point of halal meat as a food," she said.
She said, the standard requirement for halal cutting and good slaughtering practices (GSP) must be applied by RPH. The rules of slaughter are based on Islamic law. The animal has to be alive and healthy, a Muslim has to perform the slaughter in the appropriate ritual manner, and the animal's throat must be cut by a sharp knife severing the carotid artery, jugular vein and windpipe in a single swipe. Blood must be drained out of the carcass. GSP is a requirement to obtain certification of veterinary control (NKV) number so that the safety of meat produced can be guaranteed.
Furthermore, he also added, for that required a halal cutting evaluation and GSP in Category II RPH as an exemplary RPH for other RPHs. Selection of RPH Category II (PT Elders Indonesia) as the location for the evaluation of halal cuts and GSP because this RPH has been considered to have good development potential and has established the widespread distribution of its meat / carcass.
