Please Try Potato Pukis Snack Creation of Student of IPB

Innovation of the local hawker product of Indonesia was still counted very small. If there was any variation, mostly using the wheat flour as its main ingredient. Even though, the wheat production in Indonesia was very small and still relied on the import. Meanwhile, other real material could substitute the wheat such as the potato, which was less well known and widely used.

Hanief Al Naufal,  Student of Department of Agribusines, Faculty of Economics and Management, Bogor Agricultural University (IPB) together with the team incorporated in Student Creativity Program (PKM) raised the local raw material as the innovative snack which was typical of Indonesia. The team, which members were Dedy Nur Wakhid, Siti Nur Khasanah, Anindita Destriana Sari, Khusni Syafa’ah, tried to make the potato-based pukis snack. Their products were named Pawkies!. Given Bogor City had the high rainfall, consequently the rain in Bogor was almost everyday and the temperature was quite cold, then Naufal innovated by adding the ginger as the raw material for his pukis. “Pukis is chosen, because it is relatively practical in the making and the consumpution. Other than that, pukis is also the Indonesian food which is not available in other countries,” said Hanief.

According to the Man born in Kebumen, Pawkies! presented as the traditional snack innovation which was typical of Indonesia in the form of pukis. The innovation done by this team was the replacement of the wheat flour with the potato starch, as well as the addition of the ginger as the main ingredient derived from Indonesia. Both of these materials were often consumed by the community, so that it was in accordance with the taste of the community of Indonesia in general. “Although it brings a traditional theme, Pawkies! is still produced with the attention to the quality, as well as it is packaged exclusively. Therefore, this product can cover all market segments ranging from various economic, age, social, and geographical groups,” said the Chairman of the PKM team.

The main basic ingredients needed in the manufacture of Pawkies! were the white potatoes flour and the ginger. Other that that, it was also needed the supporting materials such as the sugar, the eggs, the coconut milk, the margarine, the gist, the vanilla, and the food coloring. The chocolate, the cheese, or the nuts was also used as the topping of pukis. Pawkies! was packed with three sizes, namely small, medium, and premium. Pawkies! products were sold in market with the prices varying depending on the size of the packaging. For small sizes, it was sold with the price of Rp. 10 thousand; the medium, it was sold with the price of Rp. 25 thousand; and the premium, it was sold with the price of Rp. 50 thousand. This price was expected to be able to reach the community market from all middle to upper economic classes.

“Currenly, Pawkies! recently are sold around Bogor. The sales are made using the carts by the employees. Other than that, the products are sold in the partnered cake shops with the consignment system. For the products sold through the bargain carts, the products are cooked on the spot with the dough ingredients previously made in the production house. As for the products that are entrusted in the pastry shops, the products are made and packaged in the production house of Pawkies! which has the tagline ‘Best for honest’ served with the best techniques and materials for the consumers. The tagline is easy to remember by the consumers and presented with an attractive logo. The cart of Pawkies! is also made unique, so that it can attract the attention of the consumers,” said Hanief.
