Healthy Cookies Made of Modified Cassava Flour (Mocaf) from IPB
Researcher of IPB makes cookies using Mocaf (Modified Cassava Flour) from IPB’s variety of cassava. This flour is developed by Dr. Nurul Khumaida with her research team, “Catalyst Team”. They were first focus on research and development of the new variation of cassava. Through its wings, CV Catalyst Agro Inovasi, they make products using Mocaf flour as its main ingredient.
“CV Catalyst Agro Inovasi is a startup technology-based company which is supported by the Ministry of Research, Technology, and Higher Education (Kemenristekdikti) of Indonesia. This company aims to deliver the result of the university research to enter the industrial sector and to improve the value added of cassava. We want cassava not to be bought at a cheap price from farmers,” she said.
This company tries to introduce the development and innovation of cassava. Its products include cassava seed, modified cassava flour (Mocaf), and cookies.
“Our products are Mocaf and cookies. There are three variants of cookies; mocci, monna, and mocho. Later after getting the permission, we are going to introduce cassava seed with a new variety,” she added.
Mocci (Mocaf cinnamon) is cookies made from modified cassava flour as its main ingredient with cinnamon added. Mocci is sold with a beautiful packaging of 250 gram with price IDR 50.000, while 300 gram of Mocho (Mocaf chocolate) is sold with price IDR 60.000. CV Catalyst Agro Inovasi also sells Mocaf with the price around IDR 10.000-13.000 for 500 gram and IDR 20.000-25.000 for 1 kilogram.
Dr. Nurul stated that the advantage of this cookie is that it is made from 100 percent Mocaf. This cookie is also gluten-free, using the high-quality ingredient, and without artificial sweeteners and preservatives. The Mocaf itself is made from high-quality IPB’s variety of cassava which has a lot of advantages.
“This cookie is made from Mocaf and without preservatives, it is both healthy and gluten-free. Nowadays, many people are allergic to gluten from flour. The Mocaf itself is made from cassava which we develop. The excellence of this variety is that it has high productivity with more than 30 ton/ha and high fiber,” she explained.
She also added that near this Ramadhan, Catalyst will propose selling collaboration to Agrianita IPB.
“IPB will make the parcel packages, we will offer the IPB parcel made of products that are resulted from IPB researches, one of them is this cookie. This cookie is suitable for snacking with families, especially when Ramadhan and Idul Fitri,” she proposed. (Flw)
