IPB University students from the Department of Agribusiness, Faculty of Economics and Management, Mukhamad Khirzan Adil Wafi, conducted research on the use of catfish not qualifying for abon in Boyolali. Large size catfish usually do not qualify for sorting and have a low sale value. By Boyolali residents, this large catfish is processed into shredded meat.

Based on the results of his research which was guided by Dr. Ir Netti Tinaprilla, MM, shredded catfish has become one of the souvenirs and icons of the city of Boyolali. In his research, Adil compares the value of abon catfish processing business from the use of high technology and abon processing business with low technology.

“The high technology processing business has a value added ratio of 58.12 percent, while the low technology processing business has a value added ratio of 21.39 percent. Technology influences the effectiveness of production and increases the selling value of shredded catfish. Each MSME has its own way and technology in processing so that the output created will also differ between MSMEs with one another. This different output will produce added value and business profitability that is different from every MSME, “he said.

According to him, the processing business with low technology is only able to produce at most 80 kilograms of catfish in one production. In contrast to high-tech processing businesses that are able to produce as much as 150 kilograms in one production.

Low technology processing business will produce lower output than high technology processing business. This is because the mixing is less stable (because it is done manually) so that the taste and color are different from the output of high-tech processing businesses.

In addition, low-tech processing businesses require more labor than high-tech processing businesses. In one production with the same number of workers, namely as many as five people, a business processing with low technology can only process a maximum of 75 kilograms of catfish and requires three gas stoves. While the high-tech processing business only requires one machine to process 150 kilograms of catfish. (NR)
